- Grind the meats
- Mix chicken thighs, drumsticks, breast, salt, and curing salt #1;
- Let it rest for 12 hours in a refrigerated environment;
- Hydrate the shiitake mushrooms for at least 30 minutes in hot filtered water;
- Drain the water well and dry the shiitake mushrooms with paper towels;
- Coarsely chop the shiitake mushrooms;
- Add the chicken, shiitake mushrooms, cream, and other seasonings;
- Mix well and stuff into natural pork casings;
- Let it rest for 12 hours in a refrigerated environment.
