Preparation > Chicken and Shiitake Sausage

  1. Grind the meats
  2. Mix chicken thighs, drumsticks, breast, salt, and curing salt #1;
  3. Let it rest for 12 hours in a refrigerated environment;
  4. Hydrate the shiitake mushrooms for at least 30 minutes in hot filtered water;
  5. Drain the water well and dry the shiitake mushrooms with paper towels;
  6. Coarsely chop the shiitake mushrooms;
  7. Add the chicken, shiitake mushrooms, cream, and other seasonings;
  8. Mix well and stuff into natural pork casings;
  9. Let it rest for 12 hours in a refrigerated environment.
