  1. Grind the meats or chop finely with a knife;
  2. Mix the meat, pork belly, salt, ice water and curing salt 1;
  3. Let it rest for 12 hours in a refrigerated environment;
  4. Add the chopped and pitted olives, the scallions and other seasonings;
  5. Mix well and stuff into natural pork casings;
  6. Let it rest for 12 hours in a refrigerated environment.
