Kolbasa is a sausage of Russian origin, with several variations. This recipe is a fresh sausage version. (Do not confuse with kielbasa, which is the Polish word for sausage.)

Preparation > Russian Kolbasa Sausage

  1. Grind the meats;
  2. Mix the meats, emulsifier, salt and curing salt, spices, except the antioxidant;
  3. Add the antioxidant and mix;
  4. Let it rest for 12 hours in a refrigerated environment;
  5. Stuff into 28 mm natural pork casings in 15 cm links;
  6. Let it rest for 12 hours in a refrigerated environment;
  7. Serve baked with a generous portion of mustard.
