Grind the meats using an 8mm disc or finely chop with a knife;
Mix the meats, fat, cheese, emulsifier, salt, and curing salt (except for the antioxidant);
Add the sun-dried tomatoes and antioxidant and mix;
Let it rest for 12 hours in a refrigerated environment;
Casting in natural pork casings;
Let it rest for 12 hours in a refrigerated environment.
Consume baked, pan-fried, or grilled.
