Recipe for the traditional sausage from the city of Bragança Paulista, Brazil. The fame of Bragança Paulista sausage began around 1897 with the arrival of Italian immigrants, who brought traditional recipes to the region. The product gained commercial prominence from 1911 onwards with artisanal pork sausages with spices, becoming a local tradition. The artisanal production of the sausage, focused on prime cuts of pork leg, is considered a Cultural and Gastronomic Heritage of the city.
