Preparation > Salamitos Salami Snack

  1. Grind the meat using a fine disc;
  2. Mix the meat well with all the ingredients;
  3. Let it rest for 12 hours in a refrigerated environment;
  4. Shape into 21 gauge collagen casings;
  5. Ferment for 72 hours at 24°C and 90% humidity (use according to the manufacturer's recommendations);
  6. Hang on the refrigerator;
  7. The product will be ready in approximately 6 days.
