Preparation > Texas Jalapeno Cheddar Sausage

  1. Grind the meat;
  2. Mix the meat, water, fat, salt, and curing salt;
  3. Add the antioxidant and mix well;
  4. Let it rest for 12 hours in a refrigerated environment;
  5. Add half of the chopped cheese and pepper, mix well;
  6. Grind the other half of the cheese and pepper using a 6mm disc and mix well into the mixture;
  7. Stuff into natural pork casings;
  8. Let it rest for 12 hours in a refrigerated environment.
