Preparation > Chicken Sausage with Tabasco Pepper Sauce

  1. Grind the skin from the chicken breast and thigh using a 3mm disc;
  2. Grind the meat using a 10mm disc;
  3. Mix the chicken and all the ingredients;
  4. Let it rest for 12 hours in a refrigerated environment;
  5. Stuff into natural pork casings;
  6. Let it rest for 12 hours in a refrigerated environment.
  7. Grill on the barbecue.
