Preparation > Sausage with Scarlet eggplant
Minced meat with a knife;
8mm ground pork fat;
Mix all the ingredients, except the jiló;
Let it rest for 12 hours in a refrigerated environment;
Cut the jiló into 0.5 cm cubes and leave it immersed in ice water with a pinch of salt and a little vinegar for 30 minutes;
Drain the jiló and mix well with the meat;
Place in natural pork casing;
Let it rest for another 12 hours in a refrigerated environment.
