Clean gizzard ground on 10mm disc;
Pork belly chopped with a knife;
Finely chopped onion and green onion;
Mix all ingredients and mix well;
Let it rest for 12 hours in a refrigerated environment;
Place in natural pork casing;
Let it rest for 12 hours in a refrigerated environment.
