Recipe > Salami butifarra dulce

Originating from the Catalonia region, especially the province of Girona, butifarra dulce (botifarra dolça) is a traditional and curious Spanish cured sausage that stands out for combining lean pork and pork fat with sugar and sometimes a touch of cinnamon. Although it can also be found in fresh versions for stews and hot dishes (frequently served with apple), its cured variant, similar to a salami or fuet, offers an unusual and striking contrast between the savory taste of the meat and the sweetness of the spices.
