Grind the meat to a 4mm grind;
Finely chop the pork belly with a knife;
Mix all the ingredients and let it rest for 24 hours in a refrigerated environment;
Stuff into collagen casings;
Wrap in parchment paper and mature for 14 days in a conventional refrigerator.
