- Mix all ingredients well with the meat;

- Cover, pressing the meat to prevent it from losing its shape or opening;
- Cook by immersion in water at approximately 80°C until the center of the ham reaches 65°C;
- Immediately cool in ice water;
- Let it rest for 24 hours in a refrigerated environment;
- Serve in thin slices.
