Cooked ham is a cured meat made from pork leg that undergoes salting and slow cooking. It can be made with lower quality from processed meats and using mechanically separated meat, or with high quality, made only with pieces of pork leg that preserve the natural fibers of the meat.

Preparation > Cooked Ham

  1. Cut the meat into 0.5 to 1 cm cubes;
  2. Mix all ingredients well with the meat;
  3. Let it rest for 72 hours in a refrigerated environment inside the mold;
  4. Cover, pressing the meat to prevent it from losing its shape or opening;
  5. Cook by immersion in water at approximately 80°C until the center of the ham reaches 65°C;
  6. Immediately cool in ice water;
  7. Let it rest for 24 hours in a refrigerated environment;
  8. Serve in thin slices.
