Preparation > Easy Homemade Bologna

  1. Grind or finely chop the meat;
  2. Keep everything very cold, almost frozen.
  3. Mix the meat, fat, salt, and curing salt #1 well, except for the antioxidant;
  4. Add the antioxidant and mix well;
  5. Add the spices and mix well;
  6. Let it rest for 12 hours in a refrigerated environment;
  7. Stuff into collagen 80 or polyamide 90 casings;
  8. With a not-too-fine needle, make holes (pricking) in the casing to remove air bubbles (if any);
  9. Bake at approximately 75°C until the center of the ham reaches 72°C;
  10. Immediately cool in ice water;
  11. Let it rest for 24 hours in a refrigerated environment;
  12. Serve in thin slices.
