Preparation > Duck ham
Mix coarse salt, brown sugar and black pepper;
In a container, place the salt, sugar and pepper mix at the bottom (approximately 2cm);
Place the duck breast over the mixture;
If there is more than one breast, leave at least 4cm of the mixture between each piece;
Cover the breast with the rest of the mixture, leaving the breast completely covered;
Close the container or wrap it with plastic wrap and store in a refrigerated environment for 24 hours;
Wash the item well under running water, dry well with a paper towel;
Wrap the breast tightly in a cotton bandage/cloth, beef bung or collagen casing;
Let it dry in a refrigerated environment;
Turn the piece once a day;
Wait approximately 3 weeks or until 40% weight loss.
