Preparation > Italian Cotechino
Cook the pork skin in water until it is soft;
Cut the meat into cubes;
Grind the skin while still hot with 3mm;
Grind the meat with 10mm;
Chop the parsley and chives finely with a knife;
Mix all ingredients;
Place in the pork casing;
Tie or twist every 10cm;
Cook in hot water (90ºC) for 15 minutes;
Cool and store in the refrigerator;
Cotechino is a great ingredient to cook alongside beans or lentils.
