Italian Cotechino Recipe. Cotechino is a cooked sausage prepared with pork skin, pork, salt and spices. Cotechino is a type of pre-cooked sausage, of Italian origin. Cotechino can be served with polenta and lentils. In Italy it is traditionally served with lentils at New Year. In Brazil, it is still a typical product produced by hand in regions of Italian colonization, such as the interior of the states of the South Region and São Paulo.

Preparation > Italian Cotechino

Cook the pork skin in water until it is soft;
Cut the meat into cubes;
Grind the skin while still hot with 3mm;
Grind the meat with 10mm;
Chop the parsley and chives finely with a knife;
Mix all ingredients;
Place in the pork casing;
Tie or twist every 10cm;
Cook in hot water (90ºC) for 15 minutes;
Cool and store in the refrigerator;
Cotechino is a great ingredient to cook alongside beans or lentils.
